Lemony White Bean Spread
Here is a delicious spread made especially to go with our 2016 Sauvignon Blanc.
One can of small white beans
¼ cup of fresh lemon juice
¼ cup of Tahini (sesame seed paste)
1/3 cup of extra virgin olive oil
¼ cup of Italian parsley
¼ cup of fresh mint leaves
2 cloves of fresh garlic
In a food processor, finely chop the garlic, mint and parsley. Then add the Tahini, olive oil, lemon juice and blend. Finish, by adding the white Beans and use the “pulse” button to just blend slightly. This will help to avoid mashing the beans too much and achieve a nice texture.
This spread/dip can be served chilled or at room temperature and is wonderful with toasted mini pita breads.
