Roasted Beets with Bleu Cheese Glaze

Easy to make, delicious to eat!

1 pound beets
3 oz bleu cheese

Cut off each end of beet to remove greens and tip. Wrap in foil and place on sheet tray in oven at 400 degrees. Check every 45 minutes until beet feels soft (shouldn't take much more than 45 minutes). Remove from oven and keep in foil until cooled. Remove beet from foil, peel with your hands (it should be very easy now that the beet is cooked). Slice into quarters and mix in bowl with crumbled blue cheese. Toss and serve.
