White Bean Ceviche
Enjoy with Husch Vineyards Pinot Noir or a chilled bottle of Vin Gris Pinot Noir!
8 oz cannelloni beans (a can or 8 oz soaked beans, cooked)
2 Tbl diced red onion
2 Tbl chopped fresh cilantro
1/4 lb fresh fish such as sea bass or rock fish cut into small pieces
1/2 cup fresh lime juice
A pinch of pink Himalayan salt
Combine beans, onion & cilantro in a bowl, set in fridge. Squeeze lime juice in separate bowl, add raw fish. Place in fridge, let marinate for 24 hours. Combine fish and bean mixture, add small pinch of salt, keep cold.
