Feta and Sun-Dried Tomato Muffin

Served with the Vin Gris and Pinot Noir at our 2015 PRP Picnic in the Vineyards.

1 C flour
1 T baking powder
1/2 C sundried tomatoes, chopped
1 C feta cheese crumbles
1/2 t salt
1/2 t pepper
1 egg
1/4 C water
1/2 C milk
1/2 C olive oil

Preheat oven to 300. Lightly oil a mini muffin tray. Mix flour, baking powder, sundried tomatoes, feta, salt and pepper. Whisk egg, milk, water and oil in separate bowl. Combine the ingredients and mix until combined. Fill muffin tray to top and bake for 15 minutes. Serves 24.
