Orzo Pasta

Served in the buffet line at the Picnic in the Vineyards, this was everyone's favorite salad.

2 cups uncooked orzo pasta
4 Tbl olive oil, divided
2 medium red onions, finely chopped
1 cup minced fresh parsley
2/3 cup balsamic vinegar
3 tsp dried oregano
2 tsp salt
1/4 teaspoon pepper
1 cup red pepper, chopped
1 cup yellow pepper, chopped
24 olives, sliced
1 cup crumbled feta cheese

Cook orzo according to package directions, drain. In a large bowl, toss orzo with 1 Tbl oil. In another bowl, combine onion, parsley, balsamic, oregano, salt, pepper and remaining oil, pour over orzo and toss to coat. Cover and refrigerate for 2-24 hours. Just before serving, gently stir in peppers, olives and cheese. Enjoy with your favorite Husch wine.
