Spicy Chicken Potstickers

The perfect pairing for a dry Gewurztraminer.

2 tsp sesame oil + 1 Tbl oil
1 lb chicken thighs, boneless & skinless
5 shiitake mushrooms, sliced thin
1 jalapeno, seeded and diced
1 Tbl oyster sauce
1 Tbl sweet chili sauce
handful cilantro, finely chopped
1 package pot sticker wrappers
1 cup chicken stock/p>

In a frying pan heat 2 tsp sesame oil on medium, add chicken and sear on both sides. Then add mushrooms and jalapeno. Once chicken is just about cooked add oyster sauce and chili sauce, cook for 1 minute. Remove chicken and chop finely, add cilantro, then combine all ingredients. Take one pot sticker wrapper, add 1 Tbl of chicken mixture, wet the edges of the wrapper, fold and pinch edges together. Keep potstickers under a damp cloth so they don’t dry out. To cook, in a frying pan heat 1 Tbl oil on medium-high. Set pot stickers bottom down in hot oil. Once browned, carefully and quickly add 1 cup chicken stock to pan and cover. Wait 3 minutes, remove cover.
