Apricot Appetizer
1 Package of plump dried apricots
4 oz goat cheese
¼ tsp fresh ginger, chopped
¼ tsp fresh basil, chopped
1 clove roasted garlic, chopped
Combine goat cheese, ginger, basil and garlic. Mash with a fork until soft and thoroughly combined. Fill a piping bag (or a Ziploc with the corner snipped off) with the goat cheese mixture. Slice the apricots in half to form discs. Pipe a dollop of the goat cheese onto the cut side of each apricot.
